Scrambled Egg Casserole

Ingredients
- 2 c. cubed ham or 1 lb. sausage
- 1/4 c. chopped green onions
- 3 Tbsp. melted butter
- 1 doz. eggs, beaten
- 1 (4 oz.) can sliced mushrooms, drained
- Cheese Sauce (recipe follows)
- 1/2 stick butter, melted
- 2 1/4 c. soft whole wheat bread crumbs (I use seasoned stuffing mix)
Directions

1In a large skillet, saute the ham and green onions until onions are tender.

2Add eggs and cook over medium-high heat, stirring, to form large, soft curds.

3When eggs are set, stir in mushrooms and Cheese Sauce.

4Spoon eggs into 9 x 13-inch greased baking dish.

5Combine 1/2 stick melted butter with the crumbs. Mix well.

6Sprinkle evenly over egg mixture.

7Cover and chill overnight.

8Uncover and bake at 350° for 30 minutes or until thoroughly heated.

9Serves 12.
