- 2 lb. hot pork sausage
- 1 c. cornmeal
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 c. water
Directions

1Cut sausage into 4 sections. Cook in 2 cups water until well done.

2Remove meat and put aside.

3Pour liquid into bowl and let grease rise to top.

4Skim grease off.

5Grind or break up meat into 1 cup reserved liquid.

6Bring to boil remaining liquid and enough water to make 2 cups.

7Stir constantly and add 1 cup cornmeal. Reduce heat and stir for 5 minutes or until very thick.

8Add meat mixture, salt and pepper.

9Mix and pour into greased loaf pan. Cool, uncovered, in fridge.

10Turn onto plate, slice 1/2-inch thick and fry until crisp.
