Ingredients

  • 1 c. firmly packed brown sugar
  • 3 Tbsp. water
  • 2 egg whites
  • 1/4 tsp. salt
  • 1/8 tsp. cream of tartar
  • 1/2 tsp. vanilla

Directions

    Combine all ingredients, except for the vanilla in the top of a double boiler.

    Cook over rapidly boiling water, using an electric beater, beat until the mixture stands in soft peaks.

    Remove from heat.

    Add the vanilla and continue beating until icing is thick enough to spread.
  5. 5
    This makes enough for a large cake.
