- 1 c. firmly packed brown sugar
- 3 Tbsp. water
- 2 egg whites
- 1/4 tsp. salt
- 1/8 tsp. cream of tartar
- 1/2 tsp. vanilla
Directions

1Combine all ingredients, except for the vanilla in the top of a double boiler.

2Cook over rapidly boiling water, using an electric beater, beat until the mixture stands in soft peaks.

3Remove from heat.

4Add the vanilla and continue beating until icing is thick enough to spread.

5This makes enough for a large cake.
