- 1 cup dark roux
- 12 lb crab (split in half)
- 23 cup okra (fresh or frozen, sliced)
- 12 cup onion, diced
- 58 cup celery
- 2 tablespoons tomato paste
- 38 gallon shrimp stock
- 14 ounce thyme
- 12 bay leaf
- 4 tablespoons Worcestershire sauce
- 23 lb bay shrimp
- 13 lb smoked sausage
- 58 cup green bell pepper
- 15 ounces diced tomatoes
- 3 tablespoons garlic, minced
- 38 gallon chicken stock
- 14 ounce basil
- 1 tablespoon file powder
- salt and pepper
Directions

1Make a dark roux with clarified butter and flour.

2Transfer to a heavy pot on high heat.

3Add Onion, Celery, and Green Pepper and Tomato Paste.

4Blend and cook 15 minutes.

5Add garlic, stir until fragrant then add stock before garlic burns.

6Bring to a boil.

7Add Diced Tomato, Crabs, and Sausage.

8All all seasonings (and worchestershire sauce) EXCEPT THE FILE'.

9Mix the Gumbo File' with water and add to the pot.

10Add Shrimp and Okra and bring to a boil.

11Lower temperature and simmer for 45 minutes.

12Season to taste with salt and pepper.

13Serve with rice!
