Ingredients

  • 2 (9 oz. each) pkg. frozen artichoke hearts or canned
  • 2 c. Minute rice
  • 1 1/2 lb. cooked shrimp, lobster or crab meat (about 3 c.) or use 2 (7 3/4 oz. each) cans crab meat
  • 2 cans Cheddar cheese soup
  • 2 2/3 c. water
  • 1 Tbsp. lemon juice
  • 1/2 tsp. dried dill weed
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder

Directions

    Cook artichoke hearts as directed on package. Drain and place in 3-quart ovenproof casserole. Stir in rice and shrimp.

    Mix remaining ingredients; pour into casserole.

    Cover and bake at 400° for 35 minutes or until most of the liquid has been absorbed. Stir before serving. Garnish with lemon wedges, if desired. Serves 8.
