- 1 (8 oz.) pkg. fat-free scallops
- 1 medium onion, chopped
- 1 small bell pepper, chopped
- 1 garlic clove, chopped
- 1 tsp. dried oregano
- 2 Tbsp. olive oil
- 2 (16 oz.) cans diced tomatoes
- 1 tsp. oregano
- salt and pepper to taste
- 1 lb. angel hair spaghetti, cooked
Directions

1In skillet, combine oil, onions, bell pepper and garlic. Saute until vegetables are tender.

2Add tomatoes, oregano, salt and pepper.

3Bring to a boil for 1 minute.

4Reduce heat; simmer for 10 minutes.

5Add scallops and simmer for 3 minutes.

6Serve over warm pasta.

7Top with Parmesan cheese.
