  • 1 pound white fish firm, cut into chunks
  • 1 pound salmon trout cut into chunks
  • 7 ounces scallops or peeled shrimp
  • 1 bay leaf
  • 1 onion peeled, sliced
  • 3 1/2 tablespoons butter
  • 1/3 cup flour
  • 1 cup milk
  • 6 green onions finely sliced
  • 1 tablespoon fresh dill chopped
  • 8 sheets filo dough
  • mixed greens to serve, optional

Directions

    Preheat oven to 350°F. Lightly grease a pie dish.

    Bring 1 cup water to a simmer in a large frying pan over low heat. Add seafood, bay leaf and onion. Poach for 5 mins, covered, until just opaque. Remove seafood and strain liquid, reserving 1/2 cup.

    Melt butter in a heavy-bottomed saucepan over medium heat. Add flour and cook for 2-3 mins, until light brown and nutty. Gradually whisk in milk and reserved poaching liquid, stirring continuously. Simmer for 2 mins, until thickened. Add seafood, green onions and dill. Season. Transfer to prepared pie dish.

    Layer filo dough, lightly coating each sheet with oil. Cut into a disc 1/3 inch larger than pie dish. Place over pie dish and coat top with oil. Bake for 35 mins, until golden brown.

    Serve with mixed greens, if desired.
