  • 4-ounces frozen cooked salad shrimp, thawed
  • 8-ounces cooked crabmeat, flaked
  • 3/4 teaspoon Old Bay seasoning
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped green bell pepper
  • 2 cups shredded Monterey Jack cheese
  • 2 tablespoons Land O Lakes Butter, softened
  • 8 (8-inch) flour tortillas

    Heat griddle or 10-inch skillet over medium heat.

    Combine shrimp, crabmeat, Old Bay seasoning, red bell pepper, green bell pepper and Monterey Jack cheese in bowl; mix well.

    Spread 1 side of each tortilla with butter.

    Top unbuttered side of tortillas evenly with seafood mixture, placing onto one-half of tortilla.

    Fold tortillas in half over filling; press together.

    Place tortillas into skillet; cook 5-7 minutes, turning once, or until cheese is melted and quesadillas are golden brown.

    Cut each quesadilla into thirds; serve immediately.
