Ingredients
- 3 c. chopped fresh spinach
- 2 Tbsp. water
- 1 medium onion, diced
- 3 Tbsp. butter
- 1/2 c. scallops
- 1/2 c. shrimp, peeled and diced
- 1/2 c. whitefish, diced
- 4 eggs
- 2 c. half and half cream
- 1 tsp. salt
- 1/4 tsp. white pepper
- 1 (9-inch) pie shell with high sides, partially baked
Directions

1Bring spinach and water to a boil in a covered saucepan.

2Cook 1 minute.

3Drain and cool.

4Add scallops and shrimp.

5Cook 2 minutes.

6Add diced fish and cooled spinach.

7Drain off any liquid.

8Mix eggs with cream, salt and pepper, beating well. Spoon fish and spinach into pie shell.

9Pour cream mixture over seafood.
