  • 6 Tbsp. olive oil
  • 1/2 lb. shrimp
  • 1/2 lb. sea scallops
  • 2 medium minced cloves garlic
  • 1/2 c. tomatoes, seeded and chopped
  • 1 c. onion, chopped
  • 2 c. Arborio rice
  • 1 c. dry white wine
  • 4 c. chicken stock
  • 2 c. clam juice
  • 1/2 c. fresh basil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

    In large, heavy skillet, heat 2 tablespoons oil over medium heat.

    Add shrimp and scallops.

    Saute until shrimp begins to color.

    Add garlic; saute 2 minutes more.
