Seared Capsicum Tapas

Ingredients
- 2 large red capsicums
- 4 large slice prosciutto
- 200 g goat cheese or 200 g danish feta cheese
- 1 bunch basil
- 1 tablespoon cracked black pepper
- 1/4 cup olive oil
- 1/2 tablespoon balsamic vinegar
- 1 garlic clove, crushed
- 1/2 cup parmesan cheese
- 1/2 cup chopped green olives
Directions

1Preheat oven to 200°C.

2Mix olive oil, balsamic vinegar and crushed garlic in a large mixing bowl.

3Cut red capsicum into quarters and clean out seeds.

4Toss capsicum pieces in the vinaigrette.

5BBQ capsicum pieces on a griddle.

6Drain excess oil off seared capsicum by placing them on paper towel.

7Place capsicum outer side down on a baking tray lined with baking paper.

8Lay eight basil leaves in the hollow of each capsicum piece.

9Place a thick slice of goats cheese on top.

10For half the pieces, wrap in prosciutto, securing with a toothpick.

11For the other half, sprinkle green olives on top, followed by parmesan cheese.

12Bake in oven for 15 - 20 minutes.
