- 1 Tablespoon Olive Oil
- 1 pinch Salt
- 1 pinch Fresh Ground Black Pepper
- 1 teaspoon Fresh Chives
Directions

1Pat scallops dry.

2Sprinkle with salt and pepper.

3In a cast iron skillet, heat olive oil until shimmering.

4Add scallops and cook 2 minutes.

5Do not move then in the pan.

6After 2 minutes, flip and cook an additional 2-3 minutes.

7Be careful not to over cook.

8Put on plate and add chopped chives.
