Self Saucing Chocolate Pudding

  • 125g of butter, cut into pieces,
  • 3/4 cup of castor sugar
  • 2 eggs,
  • 1 tsp of vanilla essence,
  • 1 1/4 cups of s.r. flour
  • 2 teaspoons of coffee powder,
  • 2 tablespoons of milk
  • 125g of chocolate, melted
  • 2/3 cup of brown sugar,
  • 1 tablespoon of cocoa,
  • 1 cup of boiling water.

    Preheat oven to 180 degrees.

    Cream the butter and sugar together and beat until light and fluffy. Add eggs one at a time, beating well after each addition, beat in vanilla essence.

    Sift the flour and coffee powder together and fold into creamed mixture alternately with milk.

    Stir in chocolate and pour into a 6 cup casserole dish.Combine sugar and cocoa together in a jug, add water , stirring until sugar has melted and mixture is well combined.

    Pour this mixture over the pudding, bake for 50-55 minutes or until firm.
