Senate Bean Soup

- 1 1/2 c. dry Northern beans
- 1 or 2 meaty ham hocks
- 1 medium diced potato
- 1 medium onion
- 1/4 c. celery
- salt and pepper to taste
- 2 qt. water
Directions

1Soak beans overnight in enough water to cover.

2Wash and drain beans.

3To the two quarts of water, add beans and ham hocks. Cover and simmer 2 hours.

4Add potato, onion and celery. Simmer an hour longer. Remove ham hocks.

5Cut up meat and return meat to soup.

6Remove 1 cup of beans with liquid.

7Puree then return to soup.
