  • 2 tablespoons quick-rising yeast
  • 4 cups milk, scalded
  • 1 12 teaspoons salt
  • 1 cup margarine, melted
  • 5 eggs
  • 1 cup sugar
  • 2 cups mashed potatoes
  • 2 -3 teaspoons nutmeg
  • 2 12 cups flour
  • 1 lb icing sugar
  • 2 tablespoons margarine
  • 18 cup hot water

    mix together first 8 ingredients stir well, add enough flour to form a soft dough.

    let rise until double the size then knead and roll out to 1/2 inch thick.

    Cut like doughnuts and let rise again.

    Deep fry until golden brown.

    Mix together icing sugar margarine and add enough water to make a runny glaze, dip spudnuts in and set to cool.

    Or shake spudnuts in a bag of 1 cup of white sugar and 1/2 cup of brown sugar.
