Ingredients
- 2 c. onions, chopped fine
- 2 c. cabbage, chopped fine
- 2 green peppers, chopped fine
- 4 c. green tomatoes, chopped fine
- 4 c. green cucumbers, chopped fine
- 1 c. sweet red pepper, chopped fine
- 1/2 c. salt
- 5 to 6 c. vinegar
- 4 c. white sugar
- 2 tsp. mustard
- 1/2 tsp. turmeric
- 2 tsp. paprika
Directions

1Add salt to chopped vegetables and let stand overnight.

2Press out juice and drain.

3(If desired, run a little water over the mixture and drain.

4If this is done, the relish is not quite as salty.)

5Add remaining ingredients.

6Bring to a boil and let boil slowly for 1 hour, stirring occasionally.

7Makes 5 or 6 pints.
