Sesame Paste - Tahini

- 12 cup sesame seeds (available at middle eastern and health food stores)
- 2 teaspoons lemon juice
- 1 teaspoon vegetable oil
- 2 tablespoons water
- 2 tablespoons olive oil (more or less as needed, for garnish) (optional)
Directions

1Put sesame seeds in electric blender or nut grinder and grind until smooth and lump free.

2Transfer to small bowl, and add lemon juice, vegetable oil, and water; mix to a smooth paste.

3Cover and refrigerate.

4To serve tahini, mound on a small plate and drizzle with olive oil.

5It can be used as a spread for crackers or a dip for raw vegetables.

6Covered and refrigerated, tahini keeps well for several months.
