- 9 pounds firm large cooking pears
- 3 cups white vinegar
- 11 cups sugar
- 4 teaspoons powdered ginger
- 4 cups mixed pickling spices
Directions

1Peel, core and quarter the pears.

2Mix the vinegar, sugar and ginger in a large pot and add the pears.

3Add the pickling spices (tied in a cheesecloth bag).

4Bring to a rolling boil over a medium heat.

5Remove from heat and pour into a large bowl.

6The next day, drain off the juice, bring to a rolling boil and pour it back over the pears.

7Repeat for 5 more days.

8On the seventh day, discard the spice bag, pour the pears and juices into a large pot, bring to a rolling boil and ladle into hot, sterilized preserving jars Cover and seal.

9(The pears will shrink and turn amber color during this pickling process.)
