Seven Layer Salad

Ingredients

  • lettuce and/or assorted greens, torn in bite size pieces
  • 1 c. celery
  • 1 c. spring onions
  • 1 can LeSueur peas, well drained
  • 1 c. salad dressing (your choice; I use Ranch)
  • 1 lb. fried, crumbled bacon
  • 8 oz. shredded Cheddar cheese
  • optional layers: 1 c. hard-cooked eggs (chopped), 1 c. sliced mushrooms, black or green olives or 1 c. grated carrots

Directions

    Put all ingredients in bowl in order, using lettuce and greens to fill at least half the bowl.

    Save a few of the peas to scatter on top as a garnish for color.

    Generally, this salad should be made one day ahead and covered with plastic wrap to allow the flavors to blend.

    When serving, be certain to dig to the bottom of the bowl with each spoonful.
