Ingredients
- 1 pkg. yeast
- 1/4 c. water
- 1/2 c. hot mashed potatoes
- 1/4 c. shortening
- 1/4 c. sugar
- 1 1/2 tsp. salt
- 1 c. milk, scalded
- 1 egg
- 4 to 4 1/2 c. sifted flour
Directions

1Soften yeast in warm water.

2Combine potatoes, shortening, sugar, salt and hot milk.

3Cool to lukewarm.

4Add yeast and egg. Stir in 2 cups of flour; beat well.

5Stir in the remaining flour or enough to make a soft dough.

6Knead on lightly floured surface until smooth and elastic (6 to 8 minutes).

7Place in lightly greased bowl.

8Cover, let double (about 1 hour) in warm place. Punch down.

9Shape in ball.

10Cover and let rest 10 minutes. Form rolls (clover are the best).

11Let rolls rise until almost double. Bake 10 to 12 minutes in 400° oven.
