- 4 green onions, cut in 1-inch pieces
- 1 tsp. minced ginger
- 2 Tbsp. peanut or veggie oil
- 1 lb. large shrimp, shelled and deveined
- 1 c. chicken broth
- 1 Tbsp. cornstarch
- 1 (11 oz.) can mandarin oranges (undrained)
- 1 (8 oz.) can sliced water chestnuts (undrained)
- hot cooked rice
Directions

1Prepares in 15 minutes.

2Cook green onions and ginger in oil in skillet over medium-high heat for 2 to 3 minutes.

3Add shrimp; cook for 3 to 4 minutes.

4Blend cornstarch into chicken broth; stir into skillet with oranges and water chestnuts.

5Reduce heat; simmer, covered, until slightly thickened and heated through.

6Serve over rice.
