  • 4 green onions, cut in 1-inch pieces
  • 1 tsp. minced ginger
  • 2 Tbsp. peanut or veggie oil
  • 1 lb. large shrimp, shelled and deveined
  • 1 c. chicken broth
  • 1 Tbsp. cornstarch
  • 1 (11 oz.) can mandarin oranges (undrained)
  • 1 (8 oz.) can sliced water chestnuts (undrained)
  • hot cooked rice

    Cook green onions and ginger in oil in skillet over medium-high heat for 2 to 3 minutes.

    Add shrimp; cook for 3 to 4 minutes.

    Blend cornstarch into chicken broth; stir into skillet with oranges and water chestnuts.

    Reduce heat; simmer, covered, until slightly thickened and heated through.
