- 12 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese, divided
- 8 ounces Italian sausage or 8 ounces ground beef
- 1 (28 ounce) jar marinara sauce, divided
- 8 ounces chopped fresh mushrooms
- 8 ounces frozen spinach
Directions

1Preheat oven to 375F Cook noodles according to package directions.

2Drain noodles and rinse with cold water.

3Mix ricotta, egg and 1 cup mozzarella in bowl, set aside.

4If you decided to use the fresh mushrooms chop and sautee, set aside.

5If you decided to use frozen spinach drain out excess water.

6Cook sausage (beef) in skillet over medium heat until browned and crumbly; drain fat.

7Spread 1/2 cup sauce in a 9 x 13 inch baking dish.

8Spread 3 tablespoons ricotta mixture on each noodle; top with some sausage (mushrooms & spinach).

9Roll up each noodle.

10Arrange seam sides down in baking dish.

11Top roll-ups with remaining sauce and mozzarella.

12Bake, loosely covered, for 15 minutes.

13Remove cover, bake for 10 more minutes or until brown and bubbly.

14*You may prepare this dish up to 2 days before baking.

15Wrap them seperately in foil and put in freezer bag.

16Let thaw at room temperature before baking or microwaving.
