Ingredients

  • 6 to 8 chicken breasts, off the bone, skinned and sliced thin
  • Progresso bread crumbs
  • 1 large box fresh mushrooms
  • 1 small can chicken broth
  • 1/4 c. parsley
  • 1/4 c. cooking wine
  • 1 stick butter
  • salt and pepper to taste
  • cooking oil
  • 1 egg

Directions

    Heat oil in frying pan over medium heat. Scramble egg in bowl. Dip chicken in egg and then bread crumbs.

    Fry lightly. Take out and pat off excess oil and set aside.

    In the same pan, melt butter, slice mushrooms and stir-fry.

    Add parsley, chicken broth and salt and pepper to taste.

    Add cooking wine.

    Lay chicken in greased baking pan. Pour mushroom mixture over chicken and bake at 350° for 30 to 45 minutes.
