Shellfish Casserole

Ingredients

  • 1 c. V-8 juice
  • 1 c. Hellmann's mayonnaise
  • 8 oz. crab meat (canned, fresh or frozen)
  • 1 1/2 c. shrimp, boiled
  • 3 c. cooked rice
  • 1/3 c. bell pepper, chopped
  • salt and pepper to taste
  • bread, buttered and cubed
  • slivered almonds (optional)

Directions

    Combine V-8 and mayonnaise.

    Mix together crab, shrimp, rice, bell pepper, salt and pepper.

    Pour liquid over rice mixture; mix lightly.

    Put in casserole. Top with bread crumbs and almonds. Bake at 350° for 30 minutes, or until bubbly hot.

    Freezes well. Serves 4 to 6.
