Shenandoah Apple Cake

  • 1 c. cooking oil
  • 2 c. sugar
  • 3 eggs
  • 1 1/4 tsp. vanilla
  • 2 c. sifted flour
  • 1 tsp. salt
  • 3 c. diced and pared apples
  • 1 c. chopped walnuts
  • 1 Tbsp. flour
  • 1 tsp. baking soda
  • Caramel Topping (recipe follows)

Directions

    Beat together oil, sugar, eggs and vanilla about 3 minutes. Add sifted dry ingredients , then stir in apples.

    Combine walnuts and 1 tablespoon flour; stir into batter.

    Pour into greased and floured 13 x 9 x 2-inch pan.

    Bake at 350° for 1 hour or until cake tests done.

    Cool in pan on rack.
