Ingredients
- 1 small onion, chopped
- 1 clove garlic, chopped
- 1/2 small red pepper, chopped
- 1 lb. ground beef or left over meat (roast, steak), cut in cubes
- 1 large can Progresso minestrone soup
- 1 small can tomato sauce
- 1 tsp. each: pepper, salt and oregano
- 1 bay leaf
- 4 or 5 potatoes (for mashing)
Directions

1Saute onion, garlic and red pepper until soft.

2Add ground beef and brown.

3In a casserole dish, add soup, tomato sauce and seasonings.

4Add meat mixture and stir well.

5If you are using left over cooked meat, just add it to the soup; do not cook again.

6Mash the potatoes and spoon over the soup and meat mixture around the dish, leaving a hole in the middle to let steam escape.

7Bake at 350° for 40 minutes; the potatoes should be browned and mixture bubbling.
