Ingredients

  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1/2 small red pepper, chopped
  • 1 lb. ground beef or left over meat (roast, steak), cut in cubes
  • 1 large can Progresso minestrone soup
  • 1 small can tomato sauce
  • 1 tsp. each: pepper, salt and oregano
  • 1 bay leaf
  • 4 or 5 potatoes (for mashing)

Directions

    Saute onion, garlic and red pepper until soft.

    Add ground beef and brown.

    In a casserole dish, add soup, tomato sauce and seasonings.

    Add meat mixture and stir well.

    If you are using left over cooked meat, just add it to the soup; do not cook again.

    Mash the potatoes and spoon over the soup and meat mixture around the dish, leaving a hole in the middle to let steam escape.

    Bake at 350° for 40 minutes; the potatoes should be browned and mixture bubbling.
