- 2 whole chicken breasts, skinned, halved and boned
- 1 Tbsp. oil
- 8 oz. fresh sliced mushrooms
- 2 c. sliced carrots
- 1 1/2 c. sliced onions
- 2 Tbsp. parsley flakes
- 1/2 tsp. thyme
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. dry sherry
- 1 bay leaf
- 1/2 c. uncooked Minute rice
Directions

1Cut chicken into 3-inch pieces.

2In large skillet or wok, cook chicken in oil until lightly browned.

3Add remaining ingredients, except rice.

4Cover.

5Simmer 20 to 30 minutes or until vegetables are tender.

6Stir in rice.

7Cover and simmer another 5 to 10 minutes or until rice is fluffy.

8Serves 6.
