- 2 chicken breasts
- 1/2 cup sherry
- 3/4 oz basil; minced, few leaves saved to chiffonade for garnish
- 1/2 cup honey
- 1/2 cup dijon mustard
- 1/3 cup sherry vinegar
- 1 tsp rosemary; minced
- 1/2 tsp thyme
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 olive oil; as needed
- 1 pinch salt and pepper
Directions

1Marinate chicken in sherry for 4-48 hours, at least overnight.

2Combine sherry vinegar, dijon, basil, and honey in a large mixing bowl.

3Whisk together.

4Add a pinch of salt and pepper.

5Pat dry.

6Coat chicken with enough oil to cover.

7Season with dried spices.

8Bake at 300 for approximately one hour or until thermometer reaches 165
