  • 14 fresh pumpkin, peeled, seeds removed, diced
  • 2 parsnips, peeled, diced
  • 1 leek, finely sliced
  • 2 small fennel bulbs, finely diced
  • 200 g creme fraiche
  • 12 cup milk
  • 2 eggs, beaten
  • salt and pepper
  • 23 cup parmesan cheese, grated

Directions

    Heat oven to 190C.

    Lightly grease baking dish.

    Scatter finely diced vegetable over base of dish.

    In a bowl whisk milk, eggs and creme fraiche together.

    Season well, pour mixture over vegetables.

    Scatter cheese over top.

    Bake 35 - 45 minutes till vegetables are cooked.
