  • 2 medium Irish potatoes, sliced thin
  • 2 medium onions, sliced thin
  • 1/2 c. celery, cut up
  • 1/4 c. raw rice
  • 1 lb. ground chuck
  • onion and garlic salt to taste
  • 1 tsp. ground cumin
  • 1/2 tsp. chili powder
  • salt and pepper to taste
  • 1 egg
  • 1 (16 oz.) can kidney beans, undrained
  • 1 can condensed tomato soup, undiluted

Directions

    Layer the potatoes, onions, celery and rice in a large greased casserole, salting each layer.

    Season ground chuck with onion and garlic salts, cumin, chili powder, pepper and salt to taste and egg.

    Mix well and pat layer of meat over the vegetables.

    Add kidney beans.

    Spread the tomato soup.

    Bake, covered, at 350° for 1 1/2 hours, uncovering during the last 30 minutes.
