- 10 cooking apples, peeled, cored and cut into small chunks
- 1/2 c. sugar or to taste
- 1 c. raisins
- 5 Tbsp. butter, melted
- 4 egg yolks, lightly beaten
- 4 egg whites, stiffly beaten
- butter for greasing the pan
- 1 1/2 c. toasted bread crumbs
Directions

1Preheat oven to 350°.

2In a saucepan over a medium flame, heat the apples without water until very tender, stir occasionally. Watch closely or will burn.

3Mash the apples and sugar to taste. Add raisins, melted butter and then the yolks.

4Gently fold in egg whites and mix well.

5Butter a 9-inch spring-form pan and sprinkle with 1/2 cup of the bread crumbs to make an even coating.

6Pour half the apple mixture in the pan and sprinkle the top with the other 1/2 cup of bread crumbs.

7Then add remainder of apple mixture and top with the other 1/2 cup crumbs.

8Bake for about 50 minutes until the cake is firm and light brown.

9Remove, cool and remove ring.

10Serve cut into wedges with ice cream or whipped cream.
