- 5 pounds beef short ribs (sometimes called flanken)
- Kosher salt and freshly milled black pepper
- 1 tablespoon vegetable oil
- 1 large onion, coarsely chopped (about 2 cups)
- 2 medium carrots, coarsely chopped
- 3 garlic cloves, minced (about 1 tablespoon)
- 2 tablespoons tomato paste
- 1 sprig fresh thyme or 1 teaspoon dried
- 1 Turkish bay leaf or 1/2 California bay leaf
- One 750-ml bottle red wine
- 4 cups low-sodium chicken broth
- 2 tablespoons unbleached all-purpose flour
- 2 tablespoons unsalted butter, softened

Heat the oil in a Dutch oven or a deep, flame-proof roasting pan that will just hold the ribs in one layer over high heat until hot. Reduce the heat to medium-high, add the ribs, and brown them on all sides, 8 to 10 minutes. Transfer the ribs with tongs to a platter or bowl.","2":"Preheat the oven to 300\u00b0F.
