Ingredients
- 2 tablespoons butter
- 1 large onion
- 3 -4 garlic cloves
- 1 cup white vinegar
- 1 cup cider vinegar
- 1 tablespoon mustard powder
- 1 tablespoon mustard seeds
- 1/2 teaspoon cayenne
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 tablespoons honey
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
- 1/4 teaspoon liquid smoke (optional)
- crushed red pepper flakes, to taste
- salt and pepper, to taste
- 5 lbs pork roast
Directions

1Saute chopped onion and garlic in butter until soft.

2Add all seasoning ingredients to large pot and boil gently for 30 minutes.

3Add large cubes of pork meat (remove as much fat as possible) and simmer for 3 hours or until meat is tender.

4Remove meat from sauce and cool.

5Shred pork with your fingers or two forks.

6Strain remaining liquid and add 1/2 cup or so of your favorite BBQ Sauce, if desired.

7Add shredded pork back to sauce and re-heat.
