- 1 long loaf (24 inches) sourdough or Italian bread
- 1/2 c. nonfat cream cheese, softened
- 2 Tbsp. nonfat mayonnaise
- 2 Tbsp. lime juice
- 1/4 c. chopped parsley
- 1 1/2 lb. medium shrimp, peeled, deveined, cooked and chopped
- 1/2 c. finely chopped celery
- 2 Tbsp. minced cilantro or dill weed
- 1 Tbsp. capers, drained and rinsed
Directions

1Cut bread in half lengthwise.

2With fork, remove 1 inch-wide section of bread from center of each half, leaving a 1/2 inch shell.

3In medium bowl, mix cream cheese, mayonnaise and lime juice until smooth.

4Spread cut surfaces of bread with 1/3 cup cream cheese mixture; sprinkle parsley evenly on top.
