Shrimp Appetizer Bread

  • 1 long loaf (24 inches) sourdough or Italian bread
  • 1/2 c. nonfat cream cheese, softened
  • 2 Tbsp. nonfat mayonnaise
  • 2 Tbsp. lime juice
  • 1/4 c. chopped parsley
  • 1 1/2 lb. medium shrimp, peeled, deveined, cooked and chopped
  • 1/2 c. finely chopped celery
  • 2 Tbsp. minced cilantro or dill weed
  • 1 Tbsp. capers, drained and rinsed

Directions

    Cut bread in half lengthwise.

    With fork, remove 1 inch-wide section of bread from center of each half, leaving a 1/2 inch shell.

    In medium bowl, mix cream cheese, mayonnaise and lime juice until smooth.

    Spread cut surfaces of bread with 1/3 cup cream cheese mixture; sprinkle parsley evenly on top.
