- 10 whole Medium Sized Shrimp, Peeled And Deveined
- 1/2 cups Onion, Chopped
- 1 whole Green Pepper, Stem And Seeds Removed, Chopped
- 1 whole Zucchini, Chopped
- 1/2 cups Corn, Frozen
- 1/2 teaspoons Cumin
- 1/4 teaspoons Red Pepper
- 1/2 teaspoons Oregano
- 1/4 teaspoons Garlic Powder
- 1 can (14 1/2 Oz. Size) Diced Tomatoes
- 1 cup Dry Brown Rice, Cooked Per Package Instructions
- 2 Tablespoons Cilantro, Chopped
Directions

1Begin cooking the shrimp in a large pan on medium high heat.

2Remove them from the pan when they are cooked about halfway through, after about three minutes.

3Set them aside.

4They will finish cooking later.

5Add onion, pepper, zucchini and corn into the pan.

6Cook until tender, about four minutes.

7Add cumin, red pepper, oregano and garlic powder.

8Once fragrant add diced tomatoes with liquid.

9Add salt and pepper to taste.

10Throw the shrimp back in the pan to finish cooking for another few minutes.

11Once all the veggies are tender and the shrimp is cooked through, spoon the mixture over bowls of rice.

12Top with chopped cilantro and salsa.
