Shrimp Casserole

Ingredients

  • 1 to 1 1/2 lb. shrimp, clean and boil 5 minutes
  • 1 c. raw rice, cooked
  • 1 bunch green onions
  • 3 Tbsp. butter
  • 2 cans cream of mushroom soup
  • 1 Tbsp. lemon juice
  • 1 clove garlic, crushed
  • salt and pepper to taste
  • 1 c. sour cream
  • 1 can mushrooms (if desired)
  • 2 c. sharp cheese, grated

Directions

    Mix soup, lemon juice, garlic, salt, pepper, sour cream and mushrooms (if desired) with onions, then fold in rice and shrimp. Pour into a 9 x 11-inch dish.

    Sprinkle grated sharp cheese on top. Bake at 325° about 30 minutes.
