  • 1 large onion, chopped
  • 1 pkg. frozen broccoli
  • 1 lb. peeled shrimp
  • 1/2 bell pepper, chopped
  • 2 cans cream of mushroom soup
  • 2 Tbsp. shortening
  • 1 can Cheddar cheese soup
  • 1 c. cooked rice
  • 1 can French fried onion rings

    Saute onion and bell pepper in shortening until soft.

    Cook rice and defrost broccoli.

    Mix all ingredients together in 2-quart buttered baking dish.

    Sprinkle onion rings on top.

    Top with Cheddar cheese.

    Bake at 375° for 45 minutes.
