Shrimp Celery Bisque

Ingredients

  • 1 c. water
  • 1 c. celery, chopped
  • 1 c. diced potatoes
  • 1/4 c. chopped onion
  • 1/2 tsp. salt
  • pinch of white pepper
  • 2 c. milk
  • 2 Tbsp. all-purpose flour
  • 4 1/2 oz. can shrimp
  • 3 Tbsp. butter
  • parsley

Directions

    Combine water with celery and diced potatoes.

    Add onion, salt and a good size pinch of white pepper.

    Bring the vegetables and spices to a boil in a medium sized saucepan.

    Reduce the heat, cover the pan and allow the mixture to simmer for 15 minutes or until the potatoes are done.

    Mix milk with all-purpose flour until smooth.

    Stir the flour and milk into the vegetables.

    Add shrimp.

    Add butter.

    Stir and cook until thickened and bubbly. Serve with a sprinkle of parsley on top.
