Shrimp Chowder

- 1/2 c. frozen chopped onion
- 2 Tbsp. butter or margarine
- 1 1/2 c. water
- 1 lb. peeled and deveined medium-sized raw shrimp, thawed if frozen, cut into bite-size pieces
- 3 c. frozen hash brown potatoes
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 c. milk
- 1/2 c. half and half
- 1 c. (4 oz.) shredded Cheddar cheese
- 1/4 c. chopped parsley
Directions

1Cook onion in butter in a large saucepan over medium heat for 5 to 7 minutes until tender.

2Add water and bring to a boil.

3Add shrimp and cook for 3 to 5 minutes, until no longer translucent in center.

4Remove shrimp to a bowl with slotted spoon.

5Add potatoes, salt and pepper to saucepan.

6Simmer for 4 to 6 minutes until potatoes are tender.

7Add milk and half and half.

8Bring just to a boil, stirring occasionally.

9Turn off heat; stir in cheese and parsley.

10Let stand for 2 minutes until cheese melts. Stir in shrimp and serve.
