  • 50 g tomato ketchup
  • 100 g mayonnaise
  • 2 tbsp brandy
  • 100 ml whipping cream, whipped
  • 1/2 None cucumber, deseeded and finely diced
  • 1/2 None lettuce, few leaves set aside for garnish, remainder cut into strips
  • 190 g jar asparagus, drained and finely chopped
  • 250 g cooked, peeled prawns, plus 8 tail-on prawns for garnish
  • None None Fresh basil leaves, for garnish

Directions

    In a bowl, mix the ketchup, mayonnaise and brandy. Fold in the cream and season with salt and white pepper. Mix in the cucumber, lettuce, asparagus and prawns. Spoon into 4 cocktail glasses and garnish with tail-on shrimp and lettuce and basil leaves.
