- 1 small onion, chopped
- 2 Tbsp. chopped green pepper
- 2 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1 c. water
- 1/2 tsp. salt
- 1 tsp. Worcestershire
- 1 c. grated American cheese
- 1/4 c. tomato juice
- 1 lb. shrimp, cleaned, cooked and peeled
- 3 c. hot cooked extra long grain rice
Directions

1Saute onion and pepper in butter 2 minutes.

2Stir flour then water.

3Stir until mixture thickens.

4Add seasonings.

5Add cheese and stir until melted.

6Blend in tomato juice.

7Add shrimp and heat thoroughly, about 5 minutes.

8Serve over hot, cooked rice.
