Ingredients

  • 1 medium onion (about 1/2 c.)
  • 2 Tbsp. butter
  • 1/2 c. bell pepper
  • 1/4 c. diced celery
  • 1 bay leaf, crushed
  • 1 tsp. parsley
  • 1/8 tsp. cayenne red pepper
  • 1 (6 oz.) can tomato paste (use half)
  • 2 c. water
  • 1/4 c. flour
  • 2 c. cleaned shrimp
  • 3 c. hot cooked rice

Directions

    Cook and stir onion in butter until onion is tender.

    Stir in remaining ingredients except shrimp, rice, flour and water.

    Cook until pepper and celery are tender.

    Add flour, shrimp and last of all water.

    Cook over low heat until shrimp are tender.

    Serve over rice.
