Ingredients
- 1 medium onion (about 1/2 c.)
- 2 Tbsp. butter
- 1/2 c. bell pepper
- 1/4 c. diced celery
- 1 bay leaf, crushed
- 1 tsp. parsley
- 1/8 tsp. cayenne red pepper
- 1 (6 oz.) can tomato paste (use half)
- 2 c. water
- 1/4 c. flour
- 2 c. cleaned shrimp
- 3 c. hot cooked rice
Directions

1Cook and stir onion in butter until onion is tender.

2Stir in remaining ingredients except shrimp, rice, flour and water.

3Cook until pepper and celery are tender.

4Add flour, shrimp and last of all water.

5Cook over low heat until shrimp are tender.

6Serve over rice.
