- 2 lb. shrimp, peeled and deveined
- 1/3 c. cooking oil
- 1 (8 oz.) can tomato sauce
- 1/2 c. diced celery (optional)
- 1 small onion, dice fine
- 1 (9 oz.) can whole tomatoes (no salt added)
- 1/2 c. diced green pepper, green onions and parsley (optional)
- 1/2 tsp. salt (Adolph's salt substitute)
- 1/8 tsp. pepper
Directions

1Brown onion in oil.

2Drain tomatoes and add pulp, reserving juice.

3Brown well; add tomato sauce, juice, celery and green pepper.

4Add 2 cups hot water and shrimp.

5Simmer until thickened. Add salt substitute, pepper, parsley and onion tops.

6Serve over hot, fluffy rice.

7Serves 8 to 10.
