- 8 oz shrimp, peeled and deveined
- 16 oz can low sodium tomato sauce
- 6 green onions, chopped
- 1 stalk celery, chopped
- 1/4 cup bell pepper, diced
- 1/4 cup sliced mushrooms
- 3 Tablespoons parsley
- 1/2 teaspoon pepper
Directions

1Wash shrimp and set aside. Simmer sauce, onion, celery, green pepper, mushrooms, parsley and pepper in skillet for 30 minutes. Add shrimp and cook 10-15 minutes more, until shrimp is pink and tender. Serve over rice.
