- 4 lb. shrimp, cleaned
- 3/4 c. salad oil
- 3 Tbsp. flour
- 1 large onion or 1 bunch green onions
- 12 oz. can tomato paste
- 4 green peppers
- 2 tsp. salt
- 2 tsp. black pepper
Directions

1Boil shrimp 5 minutes, saving stock.

2Make roux by heating oil and mixing in flour, stirring constantly, until well browned.

3Add onion and brown slightly.

4Add shrimp, salt and pepper.

5Stir until shrimp are coated with roux and none of the onion and roux sticks to the skillet.

6Add tomato paste and green peppers.

7Stir 10 minutes over moderate heat.

8Pour in 2 cups hot shrimp stock. Stir.

9Cook slowly for 1 to 1 1/2 hours.

10Serves 10 to 12.

11Serve over rice.
