Ingredients

  • 1/3 c. oil
  • 1/4 c. flour
  • 1 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/4 c. chopped celery
  • 1 medium size can stewed tomatoes
  • 2 lb. peeled, raw shrimp
  • salt and pepper
  • 1 c. water
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. chopped green onions with green tops
  • cooked rice

Directions

    Make a golden brown roux with water and flour.

    Add onion, green pepper and celery.

    Simmer until tender.

    Add tomatoes and water; simmer about 20 minutes.

    Add shrimp, salt and pepper. Cook on low until shrimp turn pink.

    Add parsley and onion tops. Add additional water if needed.

    Cook 10 more minutes.

    Serve over cooked rice.
