Ingredients
- 20 shrimp (8 oz.)
- 2 c. (16 oz. can) tomato sauce
- 1 small onion, chopped
- 1 celery stalk, chopped
- 1/4 green bell pepper, diced
- 1/4 c. sliced mushrooms
- 3 Tbsp. parsley
- 1/2 tsp. pepper
- 1 to 1-1/2 c. brown rice, prepared according to pkg. directions (not included in exchanges)
Directions

1Peel, devein and wash shrimp; set aside.

2(If shrimp are frozen, let thaw first in the refrigerator.)

3Simmer tomato sauce, onion, celery, green pepper, mushrooms, parsley and pepper in skillet for 30 minutes.

4Add shrimp and cook 10 to 15 minutes more, until shrimp are tender.

5Serve over brown rice.
