- 1/4 lb. butter
- 1 c. chopped green pepper
- 1 c. chopped onion
- 1 c. diced celery
- 1 c. chopped spring onion
- 1 c. tomato sauce
- 1 c. water
- 1 Tbsp. cornstarch
- 2 lb. shrimp, peeled and deveined
- salt, pepper and cayenne to taste
Directions

1Melt butter.

2Saute next 4 ingredients for 5 minutes.

3Add tomato sauce; simmer for 15 minutes.

4Add shrimp; simmer for 15 minutes.

5Mix cornstarch with water; add and simmer 5 minutes. Add salt, pepper and cayenne to taste and simmer 15 more minutes. Serve over steamed rice.
