Ingredients

  • 3/4 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. thinly sliced celery
  • 1 clove garlic, minced
  • 3 Tbsp. butter
  • 1 Tbsp. flour
  • 1 (16 oz.) can peeled tomatoes, undrained and cut in quarters
  • hot cooked rice
  • 1/4 c. water
  • 3 Tbsp. tomato paste
  • 1 bay leaf
  • 1/2 tsp. each: dried thyme and rosemary, crushed
  • few drops hot pepper sauce
  • 1 (12 oz.) bag frozen shrimp, shelled and deveined
  • salt

Directions

    In a 10-inch skillet saute onion, green pepper, celery and garlic in butter for 6 to 8 minutes until limp.

    Stir in flour. Stir in rosemary and thyme, tomatoes and juice, water, tomato paste, bay leaf and hot pepper sauce.

    Stirring, bring to a boil. Reduce heat to low. Cover and simmer, stirring occasionally for 15 minutes.

    Remove bay leaf and discard.
