Ingredients
- 3/4 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. thinly sliced celery
- 1 clove garlic, minced
- 3 Tbsp. butter
- 1 Tbsp. flour
- 1 (16 oz.) can peeled tomatoes, undrained and cut in quarters
- hot cooked rice
- 1/4 c. water
- 3 Tbsp. tomato paste
- 1 bay leaf
- 1/2 tsp. each: dried thyme and rosemary, crushed
- few drops hot pepper sauce
- 1 (12 oz.) bag frozen shrimp, shelled and deveined
- salt
Directions

1In a 10-inch skillet saute onion, green pepper, celery and garlic in butter for 6 to 8 minutes until limp.

2Stir in flour. Stir in rosemary and thyme, tomatoes and juice, water, tomato paste, bay leaf and hot pepper sauce.

3Stirring, bring to a boil. Reduce heat to low. Cover and simmer, stirring occasionally for 15 minutes.

4Remove bay leaf and discard.
