- 2 lb. shrimp, shelled
- 1 1/2 c. green pepper, chopped
- 1 1/2 c. chopped celery
- 1 c. chopped onion
- 1/4 c. parsley
- 4 slices bacon
- 1 clove garlic, chopped
- 1 Tbsp. sugar
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper
- 1 tsp. salt
- 1 bay leaf
- 28 oz. tomato sauce
- 1 small can tomato paste
- 4 Tbsp. butter or margarine
Directions

1Cook shrimp according to directions but reserve 1 cup liquid. Fry bacon until crisp.

2Saute onions, peppers, celery, garlic and parsley in skillet until tender.

3(Do not add bacon at this time; drain and reserve until later.)

4Add tomato sauce, tomato paste, reserved shrimp liquid, red pepper, black pepper, salt, sugar and bay leaf to ingredients that are sauteed.

5Bring to boil.

6Reduce heat and simmer covered 30 minutes.

7Add shrimp and bacon (crumbled).

8Bring to a boil; simmer 5 minutes.

9Serve over rice. Serves 4 to 5 adults.
